ROASTED SPRING LAMB WITH HERBS
What you need:
5 lb. leg of lamb
butter
garlic, slivered
lemon
basil
thyme
tarragon
chives
1 cup dry red or white wine
2 shallots
milk or cream
flour
Rub sides of roasting pan with butter so drippings won't burn. Place roast flat side up & rub with garlic for protection, lemon for the Sun, basil for love & the remaining herbs. make tiny slits in the roast, inserting slivers of garlic. Halfway through roasting, add wine, shallots & more herbs to taste. Roast 30 minutes per pound at 350 F. Remove roast. Boil & reduce drippings or thicken with milk, cream or flour.
