Carrot Fritters
Folk wisdom says that eating carrots improves eyesight. Whether you want to put it to the test or just want some delicious carrot fritters, try this traditional recipe.
Ingredients:
1/4 cup lukewarm water 1 package dry yeast 2/3 cup lukewarm ale 1 cup flour 2 eggs, beaten 1/4 tsp. salt, or to taste 3 carrots, sliced 4 tbsp. ground almonds 2 tbsp. orange water pinch of saffron fat for frying
Procedure:
Dissolve yeast in the water and let it rest for a few minutes. Add the ale, flour, eggs and salt; blend well. Let batter rise in a warm spot for an hour. Parboil carrots for five minutes; drain but reserve cooking water. Stir the carrot slices into the batter to coat each piece. Fry in deep fat, turning them over so they are brown on all sides. Drain on paper towel.
Beat the orange water with the ground almonds until a sauce consistency is reached. Add a pinch of saffron for a more pleasing color and serve the sauce alongside the fritters.
